David Larise, 36 years old and a long experience behind him in haute cuisine: he is the king of the vegan recipes. The Spilimbergo chef, a graduate of Alma-the International School of Italian Cuisine in Gualtiero Marchesi - is today the sous chef of the "Joia in Milan", the first and only starred vegetarian and vegan restaurant in all of Europe. Davide Larise is among the faculty of the vegan pastry course by Italian Food Academy.
The conversion to vegetarianism came after reading Micheal Pollan's book "Omnivore's Dilemma," when David Larise has made a real ethical and professional path his own, even taking a course in permaculture, a farming system based on ecological principles and strategies, designed to respect agricultural settlements similar to natural ecosystems.

Vegan and slow food recipes

A slow life, that of David Larise, who is also responsible for a garden based on totally natural production, located in the beautiful scenery of the Abbiategrasso hills. The philosophy of life that embraces his professional approach is marked by respect for nature, its cycles, the seasons and the seasonality of products; a continuous dialogue with nature that is based on the concept of balance and harmony.
For Davide Larise, the quality of a product comes from a natural process that cannot be accelerated or driven by chemical agents. The very slowness of nature, which is nothing more than an act of deference and respect to precise times and cycles, becomes the fundamental condition to ensure that a product is truly "good" and expresses all its organoleptic, taste, and beneficial characteristics to the fullest.

 

A green dream

In addition to preparing its tasty daily vegan recipes, Davide Larise does not stop cultivating his big dream: to one day leave Milan and return home, to Friuli, where he would buy a piece of land and cultivate according to his philosophy products to be used later in the kitchen. In short, what was once considered a kind of madness for a few and then an ambitious project is now a possible, fascinating and forward-looking reality: a vegan culture that embraces the ethical choices of all people who have decided to live greener.

Excellence is now more affordable

Thanks to the Chef Bonus you can get a credit of up to 6,000 euros for expenses incurred in 2021 and 2022 for your professional training.  

Starting February 27, 2023, it will be possible to apply to the Ministry of Enterprise and Made in Italy for the Chef Bonus.

WHAT IS IT?

Bonus Chef 2023 consists of a 40% tax credit (up to a maximum of 6,000 euros) recognized on expenses related to the restaurant industry for individuals engaged in the activity of professional chef at hotels and restaurants.

TO GET THE BONUS:

- you must have incurred, between January 1, 2021 and December 31, 2022, one or more of the expenses deemed eligible for the benefit

- one must be a resident or established of the state territory;

- Applicants must be in the full enjoyment of civil rights.

ELIGIBLE EXPENSES:

- Purchase of durable capital goods (high energy class machinery for food storage, processing, processing and cooking, professional tools and equipment for catering)

- Participation in professional development courses.

HOW THE 2023 CHEF BONUS WORKS

The 40% credit can be used for offsetting by F24, which must be submitted to the Internal Revenue Service. The credit is exempt from IRPEF and IRAP. 

It is also possible to assign the credit with the transfer of the facility to other parties, including credit institutions and other financial intermediaries.
