To cater to those who have also embraced this lifestyle professionally or for those who want to introduce into their restaurants' menus vegan proposals, Italian Food Academy organizes each year a specific course dedicated to the vegan cuisine, which embraces both cuisine proper and the PASTRY, enabling students, both professional and amateur, to learn techniques, learn about products, and implement haute cuisine recipes while respecting the philosophy of veganism.

Specialization Course in Vegan Cooking.

The Specialization Course in Vegan Cooking by Italian Food Academy is a'full-immersion training experience on techniques for preparing tasty dishes that are respectful of the nonviolent, health-conscious philosophy of the veganism, with the aim of training professionals capable of meeting the new demands of the food market related to the increasing diffusion of nonviolent lifestyle choices toward the animal world. In fact, more and more establishments are being set up to flank the traditional menu with a wide choice of vegan dishes, increasing the demand for chefs who can transform the vegan recipes.

The course, taught by chef David Larise, the following educational program follows:

      • The figure of the vegan personal chef
      • Merchandise and choice of raw materials
      • Knowing the ingredients
      • Identifying substitutions for our health
      • Various types of flour and how to choose them
      • How to sweeten by eliminating sugar
      • Practical part
      • Culinary and cooking techniques
      • Selection of recipes to carry out (soups, starters, main courses and desserts)
      • Beverages
      • Baked desserts
      • Spoon desserts
      • Cereal desserts

Teaching the course is the lecturer Davide Larise, of the school Gualtiero Marchesi. Approaching thevegetarian food in 2014 by landing at the restaurant Joia by Chef Pietro Leemann in Milan, the first and only star vegetarian restaurant in Europe. He became responsible for opening a vegetarian bistro in Mantua and, later, kitchen manager at Hotel Raphael Relais & Chateaux (5-star luxury, Rome), before returning in 2016 to Joia in the role of sous chef.

Stages of the IFA vegan cooking course.

I vegan cooking and baking classes organized by Italian Food Academy follow some very specific steps:

  1. Preparatory classes with study of preparatory material provided by the institution
  2. 20-hour online course to the HACCP Certificate of 3°level
  3. Classroom phase with lectures in the laboratory lasting 32 hours
  4. CV re-elaboration

Excellence is now more affordable

Thanks to the Chef Bonus you can get a credit of up to 6,000 euros for expenses incurred in 2021 and 2022 for your professional training.  

Starting February 27, 2023, it will be possible to apply to the Ministry of Enterprise and Made in Italy for the Chef Bonus.

WHAT IS IT?

Bonus Chef 2023 consists of a 40% tax credit (up to a maximum of 6,000 euros) recognized on expenses related to the restaurant industry for individuals engaged in the activity of professional chef at hotels and restaurants.

TO GET THE BONUS:

- you must have incurred, between January 1, 2021 and December 31, 2022, one or more of the expenses deemed eligible for the benefit

- one must be a resident or established of the state territory;

- Applicants must be in the full enjoyment of civil rights.

ELIGIBLE EXPENSES:

- Purchase of durable capital goods (high energy class machinery for food storage, processing, processing and cooking, professional tools and equipment for catering)

- Participation in professional development courses.

HOW THE 2023 CHEF BONUS WORKS

The 40% credit can be used for offsetting by F24, which must be submitted to the Internal Revenue Service. The credit is exempt from IRPEF and IRAP. 

It is also possible to assign the credit with the transfer of the facility to other parties, including credit institutions and other financial intermediaries.
