Social habits change and the catering industry. The pandemic also forced the cooking world to unleash new ideas and initiatives to continue to exist and resist.
Thus, the ghost kitchen concept, a new way of eating food at home with dishes made by prominent chefs.
It is a revolutionary way of live the food experience, which changed the scenario, bringing gourmet dishes in everyone's homes thanks to a kitchen designed specifically for the preparation of Meals on Wheels of a certain level.
The concept of the ghost kitchen arises from two different needs: on the one hand, that of the catering to reinvent themselves and not disappear, with all the economic consequences for producers of excellence and of the chains of the agri-food sectorand, on the other hand the food lover's need and those who do not want to give up, because of the epidemic or for other reasons, to experience an extraordinary and exclusive food experience. Or simply the desire on the part of families and couples to celebrate important occasions by sharing a moment of conviviality at home, with a lunch or dinner that knows how to emphasize its importance.

What is the ghost kitchen?

In short, the ghost kitchen is a kitchen in which superb dishes are made with fresh ingredients, which delivers only to the home, but does not have a hall. In this way, the entrepreneur can contain his expenses to just cooking and dish delivery, and customers can continue to enjoy gourmet recipes in safety and comfort.
Dishes are ordered by phone to an attendant at the ghost kitchen, to then be delivered to the home. In this process, of course, a strict protocol of measures is observed to limit contact and avoid possible contagion. The customer pays only upon delivery, in cash or by POS.

The other "smart" catering formulas.

Not only that Ghost Kitchen. The restaurant industry is changing to such an extent and adapting to the state of things that so many other smart forms related to cooking are emerging. Suffice it to refer to data from the food delivery industry, which generated more than $107 billion in global sales in 2019, an increase of 56% over the previous year.
In addition to the home delivery sector, those of the:

  • food delivery
  • e-commerce
  • dark kitchen
  • cloud kitchens or virtual kitchens (kitchens to be rented as co-working space to start your own food delivery-based catering enterprise).

In short, especially and starting in Milan, which has always been a trendy city in the food sphere, equipped laboratories, of about 15 square meters and placed in the most strategic areas of the city, are flourishing, which are rented to start one or more brands of catering made only with the delivery.
